Before Norwegian salmon farmers came to Japan to convince Japanese chefs to sell raw salmon in the 80’s, salmon sushi didn’t exist since wild salmon often contains parasites. If the Japanese were like Italians they would have scoffed at the idea to sell and eat salmon sushi.
