It seems slightly logical if you think about it hard enough. I’ve had salt on watermelon before, and I’ve heard of people pickling watermelon but I haven’t had it myself.
Salt & vinegar are common mustard ingredients, so, maybe? But it still seems gross on my initial assessment without tasting it.
I feel like anyone who considers that normal should be open to mustard on watermelon
