Same thing that’s kept all the other emulators from being taken down: not being illegal.
What was illegal about ryujinx?
Nintendo decided it was. Nothing else, to my knowledge.
Nah, Nintendo decided to offer the dev money so he stops working on it.
True but I dare say it was quickly followed with an “or else”. We do know about Nintendo’s mafia, after all so only offering the nice hand feels very off.

I got it via Emudeck and just a few days ago got another update. So I guess… No?

Totally possible, I am not very deep into Switch emulator lore.
Sort of. Nintendo’s lawyers showed up at the house of the lead dev and he nuked everything he had access to afterwards, which is all we really know, but unlike Yuzu there were no court filings or takedowns or anything. Forks of Ryujinx are still just up on Github.
Well I suppose you also need to be prepared for intimidation and self-hostable Github
